Melon with Ratafia

This month’s gourmandise: a cooling starter with a delicate liqueur flavour .

The Ratafia of Champagne is produced by assembling the must of grapes collected from the presses at the time of grape harvests, with an eau de vie of Marc de Champagne.

Select small sized melons, cut them in the middle, scoop out the seeds. Pour in the Ratafia and serve very cold.
