Seasonal Treats: Rhubarb can still be found in gardens and at markets. Why not enjoy a rhubarb tart.
In a bowl, mix 50g flour with 2 eggs. Add 100g sugar and 100g cream. Cut the rhubarb stalks into 1 inch pieces and arrange on a base of shortcrust pastry. Top with the cream and cook in a hot oven for 30 to 40 minutes. Add sugar to taste.
