This month’s special for food lovers: We are still in winter and I propose to you a mouth-watering Lardoons Salad, a speciality of Ardennes. At Reims, everyone has an ardennais in his family and also his favourite recipe for a Lardoons Salad. Here is mine and this dish is ideal for dinner.
For four persons:
250 g of smoked lardoons
2 heads of salad (choose them crisp: Batavia or Escarole)
In the original recipe, dandelion leaves are used.
10 cl wine vinegar
Boil the potatoes in water, with their skin. Stir the lardoons and the chopped onion in a stew pot. Add little by little the salad leaves, mix in the potatoes peeled and cut into slices, then add the wine vinegar. Salt and pepper to taste.
